Breckenridge DistilleryIs so much more than a place to sample some of Colorado’s finest spirits. And now there’s yet another reason to visit and perhaps even spend the day – the new Distillery restaurant featuring Bravo’s Top Chef alumnus

The restaurant had its grand opening on December 6, and offers up some very unusual and delectable fare.

Grace Gabree, Marketing Coordinator, Breckenridge Distillery “Our dining experience is unlike anything you can find in Breckenridge, and we did so on purpose. It’s fine dining with a twist. Our menu strays from the usual with items such as chicken liver profiteroles, squid ink pasta, and Chef’s du jour caviar. My personal recommendation is the profiteroles, the anchovies (served with a refreshing celery salad), or the Dutch baby. Our signature dish is the Porchetta, rolled and roasted pork belly seasoned with garlic and rosemary, served with bourbon plum jam, which is a family-style meal that serves up to six people. Of course all of these pair exceptionally well with hand crafted cocktails from our Liquid Chef, Billie Keithley.”

If all that great eating and drinking isn’t enough, Breckenridge Distillery makes for a great day trip. The restaurant is just the first of a multi-phase project, which also includes production expansion and plans for a brewery and winery in the future.

Profiteroles: A profiterole cream puff is a filled French pastry ball with a typically sweet and moist filling (although savory in the above reference).

Squid Ink Pasta: Not as scary as it sounds. Aromatic squid ink is used to color egg noodles or pasta to give it a silky black hue. The pasta itself is mild in flavor.

Dutch Baby: Sometimes called a German pancake or a puffed pancake, a Dutch Baby is a sweet popover that is normally served for breakfast but can also hold multiple sweet or savory ingredients.
